The iconic Stockyards building that has long been home to Los Vaqueros Restaurant is set for a remarkable transformation as it welcomes a new concept from Kentucky-based American Freedom Distillery, known for crafting the celebrated Horse Soldier Bourbon.
American Freedom Distillery, now the proud owners of the Los Vaqueros location at 2629 N. Main St., brings a unique history that resonates with many. According to Vicki Cisneros, President of Cisnero Restaurants Inc., the transition is anticipated to breathe new life into the historic structure.
This two-story brick edifice, originally built as a slaughterhouse, has intriguing roots. Some speculate it may have started as a barn, given that the D. Hart & Sons Livestock Co. never initiated a packinghouse operation. The building is elevated on a concrete foundation, adding to its unique character.
Despite a brief closure earlier this summer, Los Vaqueros continues to serve customers while simultaneously preparing to relocate to the nearby Stockyards Exhibits Building at 2515 Rodeo Plaza in the coming months. “The new owners have been incredibly gracious to us, allowing us to remain open during this transition,” said Cisneros.
Founded by a group of former Special Forces members who served in Afghanistan shortly after 9/11, American Freedom Distillery is not just a business; it embodies a mission of resilience and patriotism. The distillery’s founders, including Scott Neil, Rob Schafer, Mark Nutsch, Bob Pennington, Tyler Garner, and John Koko, have a story that inspired the book Horse Soldiers by Doug Stanton, which was later adapted into the film 12 Strong starring Chris Hemsworth.
The distillery’s products include bourbon bottled in molds forged from steel salvaged from the World Trade Center site, further adding to its compelling narrative.
Cisneros expressed her satisfaction that the historical building, which has housed Los Vaqueros since 1996, will now be managed by individuals who value its heritage. “It really needs to be in the hands of people who can care for it, and they can do that,” she stated confidently.
